
Pumpkin, Pumpkin Everywhere and never enough for me!

Ingredients:

1 Cup Pumpkin Puree

1 Cup Pumpkin coffee creamer

½ Cup Milk
-
2 eggs
-
2 TBS of vegetable oil
-
2 TBS vinegar
-
2 Cups flour
-
1/3 Cup Brown Sugar
-
2 tsp baking powder
-
1 tsp baking soda
-
½ tsp of salt
-
1 tsp allspice
-
1 tsp ginger
-
1 tsp cinnamon
-
1 TBS pumpkin spice
Using a stand-up mixer; or a whisk gently combines the milk, pumpkin spice coffee creamer, pumpkin puree, eggs, oil, and vinegar.





In another bowl combine the dry ingredients:
Add the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, pumpkin spice, and salt. Gently whisk them together.










In small batches add the dry mixture to the wet mixture to make sure it all gets incorporated. Stop the mixer and scrape the bottom of the bowl to make sure everything got mixed evenly.
(Trust me, it makes all the difference!)


Spray with some cooking spray on a griddle and set the temp on medium/high. When a few drops of water sizzle up the pan is ready! Use a ¼ Cup measuring cup scoop generous amounts of the batter onto the hot griddle. Cook until browned on each side. Approximately 3-4 minutes per side.

With a little tab of butter, some syrup and a sausage patty, this recipe is great for breakfast or in my house usually dinner! Enjoy!!
