Peach Bourbon BBQ Chicken

So, I was looking through my fridge the other day trying to decide on what to make for dinner. I hadn't been to the grocery store and time was tickin'! I realized I had better use up my peaches. The kids went out to the garden and picked the veggies for a salad while I sliced up a cauliflower for a side dish. I did not expect this dish to turn out as well as it did! The kids and especially the hubby loved it! There were no leftovers! 

Ingredients

  • 4 tablespoons butter

  • 2 tablespoons olive oil

  • 12 chicken legs or thighs, bone in, skin on

  • 1 red onion, sliced length ~ wise

  • 1/2 cup Bourbon 

  • 1 Cup of Peach Schnapps 

  • 1 1/2 Containers of your choice of bbq sauce

  • 3 peaches, pitted and sliced into 8 slices each


 

First, pre ~ heat your oven to 350* degrees.

 

Make sure you grease up your skillet with some olive oil before putting the chicken in the pan. 

Arrange chicken thighs in the pan adding 4 tbs of butter cut into 8 pieces.

Sprinkle with a little salt and pepper.

Cook the chicken on medium-high heat for about 4-5 minutes on each side. We just want to brown the outside, It is okay if the chicken is not cooked through it will finish up in the oven in a bit. Remove the chicken from the skillet and set aside.

While your chicken is cooking pit and slice up the peaches and slice up the red onions. Set aside.

Add in the onions to the medium ~ high heat skillet and cook for about 3-4 minutes until opaic in color. Stirring often.

While the onions cook add together the 1/2 Cup of Bourbon and the 1 Cup of Peach Schnapps. It makes the pouring easier to have them already combined and ready to go! 

Very slowly add the Bourbon and Schnapps to the onions in the skillet. Be careful if you are near an open flame. The steam will rise quickly and start to bubbly almost instantly. 

Add in the bbq sauce...

Add 1 Cup of water. Let simmer and reduce by about half. About 3-5 minutes.

Arrange the chicken thighs on top of the sauce in the skillet. 

Arrange the beautifully aromatic peach slices around the chicken. So Pretty!!

Place aluminum foil onto of the skillet and put it in the pre ~ heated oven.  Set your timer for about an hour. 

Once the peaches get tender then you know it is ready! I also added a baked cauliflower steak and a side salad. I will have a recipe for the cauliflower up in the coming weeks. They are so good! Enjoy your meal and remember to let me know how yours turned out!
