Pumpkin Spice Walnut Cookies

So, I have a small obsession, strike that a massive obsession with Pumpkin flavored anything when fall time comes around, or for me, it really doesn't matter what time of the year it is actually! 

I also love, love a soft cakey type cookie! And this recipe has everything you could want.

Pumpkin, chocolate, walnuts, a soft cakey center...

Okay just try em' out! I promise you will come back for more so make a double batch! 

Ingredients:

Pre~ Heat Oven 375*

 

2 ~ Cups of all purpose flour

1 ~ Cup of Pumpkin Puree

1 ~ Cup of Granulated sugar

1/2  ~ Cup of vegetable oil

1 ~ Egg

1 ~ TBS of Vanilla extract

2 ~ tsp Baking Powder

1 ~ tsp Ground cinnamon

1 ~ TBS of Pumpkin Spice

1/2 ~ tsp salt

1 ~ tsp Baking Soda

1 ~ tsp of milk or Pumpkin Spice Creamer

1 ~ Cup of Mini chocolate chips

1 ~ Cup of Pumpkin Spice Baking Chips

1 ~ Cup of walnuts

 

 

 

 

Using an electric mixer add in the 1 Cup of Pumpkin Puree.

Add the 1 Cup of Granulated Sugar

And the 1/2 Cup of vegetable oil

One egg.....

Add in 1 TBS of vanilla extract.

Mix well until it turns into a beautiful golden hue. Ain't in Purrtty!?!

In a separate bowl dissolve the 1 tsp. of baking soda and 1 tsp of milk/or pumpkin spice coffee creamer together and then add to the beautiful golden pumpkin goodness mixture!

Mix until incorporated! 

In a separate mixing bowl add together the

2 ~ Cups of flour

1 ~ tsp of cinnamon

1 ~ TBS of pumpkin pie spice

1/2 ~ tsp of salt

2 ~ tsp baking powder

 

Whisk together...

Slowly add in the flour and mix well to incorporate.

Add in the 1 ~ Cup of walnuts, chocolate, and pumpkin chips......Oh so good! 

Doesn't this just look so great! I was having trouble trying to not eat it with a spoon! My hubby tried to steal the bowl of dough and run with it! 

Bake cookies in a 375* degree oven for about 10-12 minutes. Drop dough on cookie sheet in about 1 /1/2 inch dough balls. Bake only until the edges of the cookies become a slight golden color and the tops are soft. Do not over bake they will burn on the bottom and stiffen. Let cool 5 minutes before transferring them to a cooling rack or wax paper. 

I hope you enjoy them as much as we did. They will not last long!
