
Savory Breakfast Fritatta

Okay, so this recipe is something I whipped up with just ingredients I happen to have on hand. So there is really Ingredient list per se. Any kind of veggies you might have on hand or sausage could pretty much do the trick! But, let me show you what I used to inspire you to get creative!
I always like to get all my ingredients out so and measured so that I have everything easily at hand. I chop up any veggies I will be using and set them aside, as well as grate my Colby jack cheese. I also brown and drain my sausage too! This prep makes cooking and clean~up easier!




Next, I put about 2 tbs of unsalted butter in my cast iron skillet, and add in the onions and mushrooms. Cook just until tender and the onions start to show that pretty opaque color.

Add kale and cook for additional 2-3 minutes.

Next, add in the ground sausage and heat through.

Next, whisk 6 eggs with about ½ Cup of milk or heavy cream like I used. It just makes it taste more decadent I think! But, whatever you have on hand will do just fine.


Add the cheese, I grated about 2 Cups of Colby Jack cheese. I also like to turn up the heat to about medium-high for about 3-5 minutes to create a nice crusting on the bottom. While doing this don't forget to preheat your oven to 400 degrees.

I added fresh basil leaves from my garden and a few slices of tomato to make it look pretty! Bake at 400* degrees for approx. 45 minutes. Until the cheeses melt and slightly brown and the egg is no longer runny.
