So, Tiramisu sounds so fancy! Doesn’t it? Usually that means super difficult! But no worries! This Tiramisu recipe is so simple. And absolutly amazing in taste! My 3 and 6 year old helped me make it! My husband loves for me to make this for his birthday every year. Funny story here: When we first started dating he mentioned to me he “LOVED” Lasagna. So I decided I was going to go all out with an Italian style dinner. So, I made a super cheesy Lasagna and for dessert, Tiramisu! He loved it so much. I think that dinner may have sealed the deal for our future! If you are looking for something that looks great and tastes “AMAZING” without all the work than this is your recipe!
½ Cup Granulated Sugar
3 Large Eggs Separated
2 TBS of Kahlua
2 Cups Strong Coffee (Cooled)
2- 8oz packages of Mascarpone Cheese
1 Pinch of Salt
30 Lady Finger cookies
3 TBS Cocoa Powder
Grated Chocolate for garnish

Using a stand up mixer beat ½ Cup of Granulated sugar, egg yolks, rum and 1 TBS of cooled coffee (I actually stuck my coffee out in a snow bank to cool!) until smooth, roughly 2-3 minutes.
It turns into this beautiful honey golden color!
Add the Mascarpone cheese to the egg mixture and beat for about 3 minutes until completely blended. Make sure to stop the mixer about half way in and scrape the bowl to make sure nothing is sticking. (Transfer to a new bowl so you can use the mixing bowl for the next step!)
Using the whisk attachment beat together the egg whites and a pinch of sugar until stiff white peaks form. . Be careful not to mix too much!
With a large spatula or spoon gently fold the egg whites into the mascarpone mixture.

Pour the cooled coffee into a shallow bowl and quickly dip one side of the lady fingers to slightly coat.
(BE CAREFUL! They soak up in an instant and become mushy if you are not quick!)
Put a layer of the ladyfingers in the bottom of the dish of your choosing.
Put a thin layer of the mascarpone whipped cream mixture in the top of the beautiful lady fingers. Spread evenly and gently.
Gently sift or use a small grater to gently tap a small amount of cocoa powder on top of the mascarpone whipped cream.
Continue the layering process with more gently soaked ladyfingers, mascarpone cheese mixture and more cocoa powder until you get to a final layer of the mascarpone cheese mixture. Lightly dust with cocoa powder and then using a small grater; grate pieces of the chocolate bar all over the top! Refrigerate covered leftovers if there is any in my house there never is! ENJOY!
